Tocopherols, carotenoids and phenolics changes during Andean lupin (Lupinus mutabilis Sweet) seeds processing

چکیده

Andean lupin (L. mutabilis) seeds, appreciated for their high protein and unsaturated lipid content, must undergo water debittering to eliminate alkaloids. The aim of this research was investigate the effects further technological treatments such as extrusion spray-drying (with two different coating agents, gum Arabic maltodextrin, at 6% w/w) on antioxidants three ecotypes. Tocopherols (mainly ?-tocopherol) free phenolics (flavonoids, phenylethanoids, phenolic acids) were abundant in bitter while carotenoids scarce. After debittering, content tocopherols bound flavonoids slightly increased, unchanged but acids decreased by 76.2% 50.1%. Compared debittered samples, did not modify tocopherols, increased marginally reduced (14.5%) carotenoids. Spray-drying diminished (30.0%, 35.4% 48.4%), mainly because processing conditions; agent dilution effect minimal. No differences between agents observed. Nevertheless, debittered, extruded spray-dried flours total tocopherol (319, 318, 211 mg/kg DM) (1033, 1179, 531 contents still high. In all flours, represented majority (79.8%–95.6%). Processed L. mutabilis present valuable levels antioxidant compounds.

Letter: Lupinus mutabilis sweet-a potent food source from the Andean region.

Tarhui-chocho (Lupinus mutabilis sweet) has been a crop plant in the Andrean region since pre-Inca times. Remains of seeds are present in tombs of the Nazca period (about 500 AD) in the Peruvian coastal desert, and the plant is represented in stylized paintings on large pots of the Tiahuanaco Culture (500 BC to 1,000 AD) of the Andean highlands. Cultivation of tarhui-chocho extended to what is ...

Lipid and protein accumulation in developing seeds of three lupine species: Lupinus luteus L., Lupinus albus L., and Lupinus mutabilis Sweet

A comparative study was carried out on the dynamics of lipid accumulation in developing seeds of three lupine species. Lupine seeds differ in lipid content; yellow lupine (Lupinus luteus L.) seeds contain about 6%, white lupine (Lupinus albus L.) 7-14%, and Andean lupine (Lupinus mutabilis Sweet) about 20% of lipids by dry mass. Cotyledons from developing seeds were isolated and cultured in vit...

Bioprocessing of Lupin Cotyledons (Lupinus mutabilis) with Rhizopus oligosporus for Reduction of Quinolizidine Alkaloids

Lupin cotyledons are good source of nutrients such as proteins and lipids and around of 3.8% of toxic quinolizidine alkaloids difficult to extract. Previously It had reported by Tempeh fabrication was possible to achieve 90% of detoxification. Never before had been reported the incidence of variables of fermentation in the detoxification that could be useful for industrial scale up of process. ...

Effect of Germination on the Nutritional and Protein Profile of Australian Sweet Lupin (Lupinus angustifolius L.)

Australian Sweet Lupin (ASL) has a nutritional profile ideally suited for human consumption with high protein and fibre, but low starch and fat content. The nutritional and protein profile of germinated ASL may be better than ungerminated ASL and these improvements would provide further benefits in its use as an ingredient in food applications. In this study the nutritional components such as p...

Anticholinergic toxicity in a one-year-old male following ingestion of Lupinus mutabilis seeds: case report.

CONTEXT The seeds from Lupinus mutabilis Sweet, also called "chocho", are an important part of the diet in several countries in South America. Prior to consumption, processing is required to remove toxic alkaloids. These alkaloids are known to have pharmacological properties as antiarrhythmics, antimuscarinics and hypoglycemics. CASE REPORT We report a case in which a one-year-old male initia...
